Long Jing also called Longjing is a roasted green tea from the area of Longjing village near Hangzhou city in East China's Zhejiang province. Immediately after picking, the leaves are dried in the shade. This drying process reduces the bitter taste of the leaves. While most other teas are followed by a process of rolling/grating to shape the tea, Longjing does not Fall this. Instead, the farmer maintains the natural shape by foregoing this processing step. Another way to see this is that the shaping step is actually integrated into the subsequent frying stage. This step consists of 10 different manual hand movements that finally shape the leaves into their flat form.
