Our fine green tea comes from the main island of Honshū, from Shizuoka Prefecture. The region is known as the center of the Japanese tea trade. The special soil conditions, coupled with a particular climate, distinguish this region and allow the plants to thrive fantastically. The result is a mild but highly aromatic cup, supported by a subtle sweetness. Sencha is a green tea whose special characteristic is a distinctive and fresh taste and which has very uniform emerald-colored leaves. Typically, Japanese green teas are pre-dried with hot air and then usually treated with hot steam for a short time to stop fermentation. Over three-quarters of the tea grown in Japanese tea gardens is sencha. Most regions produce different types, each named for its processing. For green tea, there are several cultivation methoden in Japan. Sencha comes from open fields (called "red en") exposed to full sunlight. This distinguishes it from other varieties, such as Gyokuro, which grow in reduced sunlight (on so-called "oiishita en").
Application
Green teas should be brewed at a water temperature of 80-85°C (let the water stand in the kettle for about one minute after boiling).
